I *heart* cookbooks and cooking. I always have! It is something that soothes the soul and really releases the stress from the day. Plus, it is the only place I can experiment and not feel bad about throwing it out if it goes wrong! Since I read a bunch of cookbooks and occasionally review them on here —I thought I would put a twist on Teaser Tuesdays and do them cookbook style!
Crazy Sexy Diet is not just a cookbook but it does have some recipes in it that I am dying to try. There is one in particular that just sounds very odd but I secretly wonder if it is FAB! I am not vegan or a vegetarian so this particular recipe jumped out at me because I never thought of using olives in a Quesadilla. Sometimes the simplest recipes are the ones that grab my attention!
Olive Quesadillas

(Serves 1-2)
1 large flour tortilla
4 ounces Follow Your Heart Vegan Cheese or Daiya Cheese
2 ounces caramelized onions
2 ounces roasted red peppers
8 kalamata olives, halved
Spread cheese on one half of the tortilla. Add the onions, peppers, and olives evenly. Fold the toritlla over and grill until it’s golden and crispy.

I find vegan cheese disgusting. But olives and cheese are delicious–I like olives in grilled cheese sandwiches.It's a good think I love cookbooks, I have a cookthrough blog.
